Alternate food sources could require more heating or processing, resulting in higher energy consumption: e.g. edible insects bred in artificial environments. Regardless of the cultivation, these foods will require more processing to make them acceptable to the consumer.
Profitability
Starting with cheaper inputs to produce the food means higher profits during processing. Breeding crickets will certainly be cheaper then farming cattle, sheep or pigs.
